Chicken wings are something which is my all time favourite. There are different forms of chicken wings recipes namely Bbq, hot and spicy, cajun spiced but this time I decided to go for this dish with the Indian spices. As a spicy food lover,I always love to explore various cuisines which satisfy these.
Andhra cuisine is famous for its flavorful and aromatic spices blended in its food choices. This dish is called Kodi veppudu in Telugu (‘kodi’ means chicken and ‘veppudu’ means fry). This is a dish with onions and spices which gives it the not so dry texture.
It was not long ago in Oxford street London that we got to taste this at a restaurant called Dum house biryani on Oxford Street. The aromatic and spicy dish that they presented was a class apart and so were their biryanis too. Anyone visiting London who wants to plunge into spicy South Indian cuisine should definitely try their dishes. So as the taste of this dish really appealed to us I decided to master this recipe myself and went on to prepare this.
I like the thigh, wings and leg meat of chicken compared to chicken breast which is white meat. I consider this is because the meat is less fibrous and more soft and juicy in the former due to the fat content in these cuts.This is another reason I love to try out different forms of Chicken Wings.
Here’s presenting the recipe for the special Kodi Veppudu wings which I prepared with Chicken Wings
Recipe
Ingredients
For marination
Chicken – 500 g (10 to 12 wings)
Ginger garlic paste – 1 1/2 tbsp
Chilli powder – 1 tbsp
Turmeric powder – 1 tsp
Coriander powder – 1/2 tbsp
Crushed black pepper powder – 1/2 tbsp
Garam masala – 1/2 tbsp
Salt – to taste
For the sautee
Onions – 2 medium
Garlic ( finely chopped) – 6 to 7 cloves
Curry leaves – 1 sprig
Green chillies -2
Crushed black pepper – 1/2 tbsp
Garam masala – 1/2 tbsp
Coriander leaves (chopped) – 1/2 cup
Salt – to taste
Water – 1/2 cup
STEPS
1. Marinate chicken with the ingredients under the marinade mentioned above overnight or atleast 4 hours.
2. Heat a pan and put in the marinated chicken with half cup water and on cook it covered on medium flame till the water dries up.
3.Heat a seperate pan. Add oil and add onions and green chilli and saute on high flame till golden brown. Then add garlic and saute for a minute.
4.Then add in the boiled chicken to this. Add in the crushed pepper powder garam masala and cook on medium flame covered for 10 minutes.
5.Then add in the chopped coriander leaves and stir it into the dish.
6.Once chicken is nicely browned, turn off the flame and garnish with curry leaves.
