Fish Roast is a dish where the lightly fried fish pieces are coated with a onion and tomato based base which covers the fish pieces well. Roast is always my favourite be it with fish, chicken, prawns etc. I usually have prepared this with Black pomphret, kingfish etc but recently one of my favourite foodie and seafood lover on Instagram @salmanthefoodie suggested I try Salmon for this type of Roast or Biryani. So here it is my first attempt for Fish Roast with Salmon. Considering I like Salmon only for Kottayam Fish Curry now I have found another dish too that I love to use Salmon in. And I should confess this really went well with Salmon as choice . Next trial is Fish biryani with Salmon.
This goes well with rice or chapathi
Here goes the recipe
Ingredients
Fish – 1/2 kg ( Cut into medium pieces – in this I have used Salmon cut into small cubes)
For marination
- Turmeric powder – 1/4 tsp
- Kashmiri Chilli powder – 1 tbsp
- Crushed black pepper powder – 1/2 tsp
- Salt – To taste
For the dish
- Onion – 2 medium thinly sliced
- Tomato – 2 medium, finely chopped
- Green chilies – 2 (slit in the middle)
- Crushed ginger garlic – 1 tbsp
- Curry leaves – atleast 8-10 in number
- Turmeric powder – 1/4 tsp
- Kashmiri chilly powder – 1 tbsp
- Garam masala – 1/2 tsp
- Coriander powder – 1 tbsp
- Fish Masala powder – 1.5 tbsp
- Pepper powder – 1/2 tsp
- Fennel powder – 1/2 tsp
- Coconut oil – 3 tbsp
- Salt – To taste
Steps
1. Marinate the fish pieces with the ingredients under ‘for marination’ for around 15-20 minutes.
2. Heat a wide non-stick pan and add in 2 tbsp coconut oil when hot.
3.Lightly fry the fish pieces on low to medium flame and remove them from the pan.
4.In the same pan curry leaves, sliced onion and green chillies. Saute well at medium heat.
5.When the onion turn golden, add the crushed ginger garlic to it. Sauté well for 2 minutes till the raw smell goes.
6.Now lower the flame and add in the powders in this order sautéing each for approximately 2 minutes each – turmeric powder, coriander powder, fish masala powder, Kashmiri chilly powder, garam masala, fennel powder and crushed black pepper powder. You may add in 1 tbsp of oil in case the powders are drying out.
7.Now add in the tomatoes and mash it up well with the mixture and also add in 1/4 cup hot water and mix it adding salt as required and close the pan with a lid for 4-5 minutes
8.When the tomatoes get mashed up, add in lightly fried fish pieces on the masala.
9.Now coat the fish pieces with the masala by mixing very gently taking care not to break the pieces. Keep it closed and cook for 5-7 minutes.
10.Switch off flame and serve hot.
