Kerala Pork Roast

Today was a memorable day because I got a glimpse of the first snowfall of the season today. From the time we moved here we kept on hearing how it doesn’t usually snow in Eastbourne, it being the sunshine coast of UK and I was disappointed because I wanted to see those magical flakes drop and just immerse myself in those beautiful moments. And there today morning the first thing as I looked out of the window was this. Though it was only for a few hours, I got to capture the moment forever:) looking forward to many of these kind of days soon……

Snow reminds me of and makes me miss my MBBS hostel days ( our hostel was called snow hostel) and we girls were called ‘snowies’. The one time before this that i got to see snow was on our college trip to Manali but that was the ‘stationery’ snow as i call it. The feeling you get when you see snow falling as such is totally breathtaking. I have always been a winter person. I love the fact that even though winters make you a bit lazy it always keeps us fresh unlike summers when the scorching heat takes its toll.

So as I witnessed my first snowfall today , I was reminded of Christmas celebrations at home and a yummy dish Amma always used to make on special occasions mainly Xmas and Easter ( because Acha is a hardcore red meat fan). The cut of pork taken for this recipe is Pork shoulder or Pork Belly slices as it has maximum fat content as well. Try and avoid pork loin pieces for this recipe unless you want just lean meat (because it makes the dish into a close version of beef roast then). Pork is best for its fat content and that’s what makes it unique and tasty.

So here goes the Special pork roast recipe

RECIPE

Ingredients

Pork – 1 kg

Onions – 4 medium sized

Garlic paste – 1 tbsp

Ginger paste – 1 tbsp

Turmeric powder – 1/2 tsp

Coriander powder – 2 tbsp

Chilly powder – 1 tbsp

Meat masala – 1 tbsp

Garam masala – 1/2 tbsp

Pepper powder – 1 tbsp

Vinegar – 1 tbsp

Oil – 4 tbsp

Salt – to taste

STEPS

1. First clean the pork and cut into small cubes.

2. Heat a pan and add the oil. When hot add the onion and sauté till brown. Now add the ginger garlic paste

3. Now add turmeric powder and sauté for a minute followed by all the other masala powders and sauté again for 3 to 4 minutes

4. After this add the washed pork cubes to the pan and mix thoroughly and then keep on low flame for 20 to 25 minutes mixing once or twice in between.

5. Now transfer the entire contents of the pan to a pressure cooker and add one cup of water and cook for 3 whistles ( it varies from each variety of pork meat) or till the pork is done.

6. After stopping the flame, open the cooker after 15 minutes when cooled down.

7. Serve hot with Kerala Porotta/ appam/ rice
