Peanut Butter Cookies

Yes the Christmas fever has set in here since a few weeks time. Being the first Christmas away from home and also away from CMC it feels a lot different definitely, but the way Christmas is celebrated here in all festive spirit is a treat to watch… I must say that being here I am not missing the cheer with which we used to celebrate Christmas in college too badly….

Christmas celebrations at college also used to start way early…the way the hospital wards were decked up to compete for best decorated ward….the choirs of different churches performing and the college Christmas program… the various department Christmas parties …. The fun and frolic….anyone who leaves CMC usually misses this time of the year specially… also mostly by Christmas week we all landed up at home with the Christmas holidays.

Christmas at home is always special …decking the Christmas tree was enjoyable with everyone coming together to do that…..then is cake baking time with both Amma and my aunty (whom I call Jijichechi) taking the lead and we all end up licking the cake batter on Xmas day Amma ends up preparing everyone’s favourite dish ( we all have separate favourites :d) so the table is usually covered with all possible dishes…. This time it’s our first Xmas together in UK and it’s got to be special in a different way:-) as the Christmas decor starts this week, we are getting into the festive mode…. And as part of that i decided to bake something this time to get the Christmas cheer on.

Somehow i am not a sweet tooth person… and yes the cakes and pastries don’t tempt me as much as a fish curry does – it’s strange I know… but to compensate for the cakes i love cookies in any form and this time it’s a special cookie made with peanut butter and coconut flour that i am posting here… yes so all the snickers and bounty chocolate lovers might find this interesting. It’s my own creation and so i have used some new mix of ingredients. But it definitely came out to be crisp and tasty and Percy being a bounty snickers fan found this treat quite tasty and told that he better start running a bit more if i end up with more of my creations:):)

RECIPE

Ingredients:-

Peanut butter (unsweetened)- 1/2 cup

Coconut flour – 1/3 cup

Coconut sugar – 1/2 cup

Egg – 1

Vanilla essence – 1 tsp

Cinnamon – 1 tsp

Choco chips – 1/4 cup

Salt – to taste ( only if peanut butter is unsalted )

1. Add the wet ingredients – peanut butter , egg , vanilla essence and mix well

2. In another bowl mix the coconut sugar , coconut flour and cinnamon and mix well .

3. Add this dry ingredient mixture to the first bowl containing the wet ingredients.

4. Now add the choco chips and mix well.

5. Now with one tablespoon take small scoops in your hand and slightly press to make a disc and place them on the baking tray ( line the baking tray with parchment paper or grease the tray with some butter )

6. Preheat oven to 180 C / Gas 5

7. Bake for 10 – 12 minutes until cookies begin to brown.
