And today was one of those days I woke up with a flu and even though I had lots of plans in mind about turning it into a good productive Sunday it didnt happen unfortunately. Body ache and headache was so bad that I was forced to be resting. So Percy took charge of the kitchen today and he whipped up this Kerala style Chilly chicken.
We didn’t have bell peppers or capsicum with us and also had some chicken left in the freezer with basic salt and pepper marination done last week. So we came across this recipe last week in Lekshmi Nair’s YouTube channel as an Easy Kerala Chilly Chicken. And yes since it didn’t need the capsicum this would be the recipe he wanted to try today.
Percy, I feel has a different style of approach when he puts his chef hats on. I tell him that constantly when he comes up with a dish mostly close to perfection. He kind of likes to follow most recipes to the ‘T’ (today he was forced to make some variations like we had marinated chicken) which I mostly don’t do unless it’s baking and he also fully puts his heart and soul into cooking a specific dish. And therefore the result is a lip smacking dish.
This pairs well with Fried rice/ noodles/ Porotta/Chapati
Recipe adapted from Lekshmi Nair’s YouTube Channel – Easy Chilly Chicken
RECIPE
Chicken – 1 kg , medium pieces
Onion – 2 medium sliced into cubes
Green Chillies – 5 to 6 in no
Garlic chopped – 2 tbsp
Ginger chopped – 2 tbsp
Tomato ketchup – 3 tbsp
Chilli sauce – 3 tbsp
Soya sauce – 2 tbsp
Salt – to taste
Crushed black pepper powder – 2 tsp
Oil – 2 tbsp
STEPS
- Heat a kadai or a round bottomed non stick pan
- Now add in oil and when hot add in the chopped ginger and garlic and sauté for 2 to 3 minutes
- Then add in the chicken pieces and keep on medium heat and cover and cook it for 10 to 15 minutes stirring once or twice in between so that it doesn’t stick to bottom of the pan
- Then once half cooked add in the sauces and pepper powder and mix well for 2 to 3 minutes
- Now add in the onions and green chillies and mix well. Cook for 5 to 7 minutes.
- Switch off flame and serve hot !!
